Wildflower: (Crystallization: Weeks to 6 months) Considered an expressive shapeshifter with a taste that changes season to season from bright and floral to deep and earthy base on the flower profile. It is a true snapshot of place, weather and time, made from dozens of blooming plants in Northeast Florida that can include Titi, Spanish Needle, native Sunflowers, Gallberry, Palmetto, Goldenrod, and various Asters among others. Additionally, lighter notes are drawn from seasonal wildflowers like Milkweed, Bee Balm, Tickseed, and Black-Eyed Susans. No two batches are ever the same, even from the same location. Wildflower honey is often the best “map” of a region, capturing dozens of plants across a wide area in a single jar.
