Sourwood: Prized for its buttery, caramel-smooth sweetness with a gentle spice finish. Considered a scarce honey in the Southeast, our Sourwood honey comes from the Appalachian Mountain forests of Georgia, blooming for a brief 2–3 weeks in late June to July. Fun fact: Sourwood trees are so finicky they rarely produce usable nectar two years in a row, and even when they do bloom the seasonal crop can be wiped out by inclement weather, making true sourwood exceptionally scarce. Sourwood leaves turn brilliant red in fall, making the same trees that feed the bees a seasonal showstopper. Crystallization: 6-12 months
