Saw Palmetto: One of Florida's most distinctive honeys, Saw Palmetto is prized for its rich, full-bodied flavor with notes of caramel, toasted sugar, and a subtle herbal finish. Harvested from our own hives in Northeast Florida, this honey comes from the nectar of the native Saw Palmetto, which blooms for only a few short weeks in late spring. The bloom is highly dependent on weather and seasonal conditions, making each year's harvest unique. Despite the plant's abundance across Florida, producing a good Saw Palmetto honey crop depends on the timing of the bloom, strong colonies, and favorable weather. Crystallization period: approximately 6–12 months.
